Sweet potato falafels in homemade pita bread



Falafels, I can never get them right ...until now .... 












Ingredients:

1 sweet potato, medium size
250 gr cooked chickpeas
2 cloves of garlic
juice of half lemon
2 Tbsp olive oil
1 tsp ground cumin
1 tsp ground turmeric 
1 Tbsp tahini
salt and pepper 
sesame seeds

First, peel the sweet potato and cut it into chunks. Steam it for 20 minutes or until very soft. 
In a food processor place half of the chick peas, sweet potato, garlic, lemon juice, oil, tahini, spices and seasoning . Pulse until smooth then add the rest of the chickpeas and pulse once more but make sure the chickpeas is semi crushed .
Place the sesame seeds into a plate.
Using your hands ( preferably wet ) form patties and roll them into the sesame seeds.
Place them on a baking tray.
Repeat until all the mixture is gone.
Bake them on 180 C for 35 - 45 minutes. 

for the Pita breads you will need:

200 gr white flour
50 gr wholemeal flour
1 tsp dry yeast
half a tsp of salt
1 - Tbsp olive oil
180 ml water

Make the dough and leave it to rest for 45 minutes.
Divide the dough into 5 - 6 balls and roll each ball flat. 
Place a cereal bowl us side down on the top of the flat dough and cut around using a knife.
I know from practice that cutting the dough in this way will help it rais better in oven.
Place the rounds onto a baking tray and bake for 7 -8 minutes on 200 C.

Both falafels and pita breads freeze well. 

Serve the falafels with some yogurt and cucumber sauce as well as any fresh veggies you have...

Finger lickin open wraps

I've got a big thumbs up for this mid-week veggie dinner from my family. Super looking and super tasty wraps made with simple ingredients in no time at all ....













You will need:


1 big-ish sweet potato, grated
1/2 cup of dry soya mince
2 cloves of garlic, minced
1 sliced onion
1 sliced red pepper
 one handful cooked chick peas ( optional )
oil
salt and pepper
2 tsp chipotle paste or any other chili paste
 8-10 corn wraps
 parsley for topping
cheese ( optional )


Place the grated sweet potato into a big plate, add the dry soya mince, garlic, chipotle paste  and salt and pepper.
Set a side.
Heat up a medium size cooking pan, add a big splash of olive oil and stir in onion and pepper.
Add the soya/sweet potato mixture, stir it all up, add 400 ml of water, put the lid on and cook the mixture for 15 minutes. Add the chick peas if you are using it.
Stir often, add more water if the mixture is dry and potato is not cooked.
In a separate frying pan, heat up the wraps - each wrap goes in a dry pan for a minute, each side.
Form a taco shapes while they are still warm and fill them up with the filling. 
Sprinkle some parsley or cheese if you wish, I like to keep mine vegan.

Шпагети со леќа / Spaghetti with lentils

There is only one type of spaghetti "bolognese" in our house and everyone loves it....







Ке ви треба:

1 поголем кромид
1 црвена пиперка
250-300 гр зеленчук по желба ( батат, тиква , морков) рендан 
3/4 чаша црвена леќа
500 гр сецкани домати или пасата 
1 лажица доматно пире
лук, 
сол и бибер
оригано
босилок
100 гр смрзнат грашок или свежа брокула
500 гр интегрални шпагети
пармезан по желба


На 2-3 лажици маслиново масло, пржете го кромидот.
Додајте ја ситно сецканата пиперка, пржете ја да омекне па додајте крупно рендана тиква (во мојот случај)
Додајте ја и леќата,промешајте и ставете топла вода (околу 2 чаши)
Варете на тивко со капак околу 20 минути или додека леќата и зеленчукот не омекнат.
Сега ставете сол, бибер,оригано, доматно пире како и сецканите домати.
Додајте и малку вода kako и ситно сецканиот лук.Сосот се вари 20 минути,при крај се додава свеж босилок и смрзнатиот грашок ако користите.
Во меѓувреме сварете ги шпагетите,додајте ја брокулата 3-4 минути при крај .
Сервирајте ги шпагетите со сосот, наросени со пармезан или напрскани со маслиново масло.



you will need:

1 big onion
1 red pepper
250 - 300 gr vegetables ( sweet potato, butternut squash or carrots )
3/4 cup red lentils
500 gr passata or can of chopped tomatoes
1 tbsp tomato puree 
garlic
salt and pepper
oregano 
basil
100 gr frozen peas or fresh broccoli 
500 gr wholewheat spaghetti 
parmezan 



Heat the oil in a large saucepan and fry the onion and the red pepper.Add the grated butternut squash, the lentils and 2 cups of water.
Simmer for about 20 minutes or until the lentils are tender.
Add the passata or can of tomatoes,tomato puree, salt, pepper, oregano and minced garlic.
Cook the sause for about 20 minutes.
Before the end of the cooking, add the frozen peas if you are using. 
In a meantime, cook the spaghetti , 3-4 minutes before the end, add the broccoli florets if you prefer them.
Serve the spaghetti with the sause, sprinkle some parmesan or any other grated cheese.
