Raw vegan mini cups

Hello blog readers, this my last recipe before
 I go on holiday! 
Enjoy!!!
 






Ingredients:
for 12 cups
100 gr nuts, brazil nuts, cashew, walnuts or combo
1 tsp flax seeds
1 tsp chia seeds
90 gr dates or dried figs
50 gr dried berries such as cranberries
100 gr porridge oats
1 Tbsp oil, I used coconut 
1 Tbsp date syrup or any other ( even honey )
fresh strawberries
mint leaves


Place all ingredients in a food processor and blitz until everything is nicely chopped.
Scrape off into a clean and lightly oiled surface and form a long sausage shape.
Cut it into half then each half into half and so on to get 12 pieces.
One by one, pat and push into a small cookie cutter, pushing down in the centre and removing the cutter.
They don't need to look perfect. 
Place a piece of strawberry onto each cup and decorate with mint leaves.

note: I made double batch straight away, 12 cups and 12 balls, ready to be eaten as a snack !
Place them in an airtight container and keep them in the fridge for up to 2 weeks. They freeze well too !

"Искрен" сладолед / Innocent ice cream

I call this ice cream Innocent because there is no sugar in it, the only sweet taste you get is from the strawberries or cookies if you like to add some.It is a bit tarty but I like it....











Потребни состојки:

500 мл Јогурт, немасен, масен, грчки, цврст, течен
1 рака јагоди
3 - 4  колачи


Испасирајте ги јагодите, додајте го јогуртот и издробените колачи.
По желба додајте мед.
Ставете го сладоледот во пластичен сад и замрзнете го.
Пред конзумирање ставете го на собна температура околу половина час да се "пушти"
Јагодите може да бидат и замрзнати, во тој случај ставете ги во електричен блендер да се изситнат па тогаш додајте го јогуртот како и колачите.



Ingredients:

500 ml yogurt , greek stile, full fat or fat free
1 hand full strawberries
3 - 4 cookies

Mash the strawberries, add the yogurt and crumbled cookies.
Add some honey if you wish.
You can use frozen fruits, in that case blend the fruit first in a electrical blender until smooth and then add the yogurt and the cookies.
Pour the ice cream in a plastic pot and freeze it.
Before you want to eat it, place the ice cream on room temperature for 30 minutes for easier scooping.

Тортици со јагоди и боровници / Cakes with strawberries and blueberries

Easy recipe, ordinary ingredients, light and fluffy texture and buttery crumble on the top  .... 



Потребни состојки:

2 јајца
6 лажици масло
100 гр шеќер
250 мл јогурт
280 гр брашно
1 ванилин шеќер
2 лажички пециво
пола лажиче сода
малку сол
150 гр овошје
за трошките одозгора:
50  гр брашно
40  гр путер
25 гр шеќер

Во поголема здела ставете ги јајцата, додајте ги шеќерот и ванилата и матете со жица маталка.
Додајте го маслото и јогуртот и сите суви состојки како и овошјето.
За трошките ставете ги трите состојки во мала здела и со прсти трљајте го путерот во брашното и шеќерот да добиете трошки.
 Поделете ја смесата 
во премечкан со масло калап за 12 мафини,
 одозгора ставете ги и трошките.
Печете ги тортиците на 200 степени околу 20 минути.


Ingredients:

2 eggs
6 tbsp oil
250 ml yogurt
280 gr flour
15 gr vanilla sugar
100 gr sugar
2 tsp baking powder
half tsp baking soda
pinch of salt
150 gr fruit ( chopped) 
for the crumble:
50 gr flour
40 gr butter
25 gr sugar


In a mixing bowl, whisk the eggs with both sugars,add the oil and the yogurt as well as all the dry ingredients.
Add the fruit .
For the crumble, put all ingredients in a small bowl and rub it with your fingers to get crumble texture.
Prepare a muffin tin for 12 by spraying some oil then pour in the cake mixture followed by putting the crumble at the top.
Bake the cakes on 200 C for around 20 minutes.
