Caramelized onion hummus with seeded flatbreads

Happy New Year 2018 !!!
Christmas is over so as the eating chocolate, drinking prosecco and long sleep in the mornings....
I am going to kick start this January with this delicious hummus inspired by

 15 minutes vegan

and those beautiful organic homemade flatbreads ....







For the hummus you will need: 

2 onions, sliced
1 tin of chickpeas or 300g cooked 
1 clove garlic
2 Tbsp tahini 
juice of one lemon
generous drizzle of good olive oil
salt

Heat some olive oil in a pan, add the onion and slow cook until caramelizes.
Tip the chickpeas into a bowl. Cover with boiling water and allow to sit while the onion is cooking.
Tip drained chickpeas into a blender, half the onion, tahini, lemon juice, olive oil, salt and garlic and blend until smooth.
Serve the hummus with the rest of the onions...






For the flatbreads I used:

400g organic seeded brown flour
about 250 ml water
2 Tbsp olive oil
1 tsp salt 
1 Tbsp sesame seeds

Simply mix the ingredients, form a dough and leave it to rest for a few hours or even overnight.
When you need the flatbreads, heat a non-stick pan , dust a surface with flour, tip the dough on it and divide the dough into 10 - 12 balls.
Roll each ball flat and place them on the hot pan 2 or 3 at the time.
Cook the breads 3 to 4 minutes on each side or until nicely coloured.
I like to brush the flatbread with olive oil before serving.
 Any leftover ? you can freeze them ( never happened to me though ) 

note: the breads have a nice texture, more on a chewy side rather then soft

Експрес лепиња без квасец /Yeast free Instant flat breads

Happy Easter if you are celebrating! My country is celebrating Orthodox Easter called Велигден which is not until first of May. Since I am in UK I get to celebrate Easter twice and I am very happy about that. My children  are particularly happy because they get double fun that both Easter celebration can bring!
These flat breads are an ideal quick fix in my life, everyone loves them, especially with some homemade humus and slices of avocado. I can't praise them enough .............







Потребно е,

200 гр интегрално пченично брашно
180 гр овесно ( мелени овесни снегулки )
2 мали лажички прашок за пециво - без алуминиум*
70 гр овесни снегулки
50 гр семки од сончоглед
3 лажици ленено семе
3 лажици маслиново масло
1 лажиче сол
околу 300 мл млака вода 

Измерете и измешајте ги сите суви состојки, додајте го маслото како и водата.
Направете тесто, поделете го на 10 - 12 топки и развлечете ги тестата тенко.
На загреана тава пржете ги лепчињата на суво околу 3-5 минути од секоја страна.
Послужете ги топли наместо леб.
Може и да се замрзнат!

*Прашок за пециво без алуминиум може да се најде во продавници за здрава храна.



Ingredients: 

200 gr wholemeal wheat flour
180 gr oat flour made of ground porridge oats
2 tsp aluminium free baking powder
70 gr porridge oats
50 gr sunflower seeds
3 Tbsp flax seeds
1 tsp salt
3 Tbsp olive oil
around 300 ml lukewarm water

Weight all dry ingredients, mix them all up and add the oil as well as the water.
Form a dough, divide it into a 10 to 12 balls and roll each ball flat.
You can simply use your palms.
Heat a non stick frying pan and dry fry the breads for 3-5 minutes of each side.
Serve them warm instead of bread.
Perfect for freezing!

February Feasts

Energy food is what I need for uplifting during a dismal January and February, this is my typical menu on a good day.  This means I have planed ahead what I am going to eat, creating a list of ingredients, shopping over weekend, soaking the beans and grains, chopping veggies and even cooking some of it in advance ....




Breakfast: smoothie made of pre soaked oats, banana, spinach, blueberries and ground seeds.
Lunch: Hummus, flat breads and sliced veggies.
Dinner: Quinoa, green beans, avocado, tomatoes, fresh chili pepper and walnuts. 

To make the smoothie ( serve 2 ) you will need:
1/3 cup porridge oats
1 banana
handful of spinach leaves 
handful of blueberries
300 ml cold water, more or less 

Blitz all the ingredients in a blender for 30 seconds.







To make the hummus you will need: 
300 gr cooked chickpeas,
3 Tbsp olive oil,
salt and pepper
juice of half lemon
1 Tbsp tahini 
a few sun dried tomatoes, optional

Blitz the ingredients together in a blender until you get the consistency you want.

The flat breads are made of 200 gr wholemeal flour, 1 tsp baking powder, 1/2 tsp salt,
40 gr melted butter and 120 ml warm water.
Mix up all the ingredients using a electric hand mixer.
Leave the mixture on room temperature for 2 hours.
Divide the dough into ten and roll each one to get a flat round disk.
Heat a non stick frying pan and dry fry the breads for 30 sec on each side.



  
To make this quinoa dish you will need:
1 cup of cooked quinoa or 1/2 cup of dry ( cook it by following the instruction on the packet )
handful of green beans
1 fresh chili,
handful of chopped nuts
handful of tomatoes
one avocado, cubed or sliced 
olive oil, salt pepper and parsley

Лепиња со пашканат и сусам / Parsnip and sesame flatbreads

These flat-breads are incredibly soft and tasty, once you make them you will look forward to make and eat them again. When I got them out of the oven, half were eaten by the children. Those that survived I serve them with some homemade humus and aubergine dip, they would of been a perfect match with a steaming bowl of soup, well, maybe next time...........Inspired by Nordic bakery, Soho, London














Потребни состојки:

200 гр пашканат, рендан
250 гр јогурт
50 мл масло
пола лажичка сол
1 лажичка сода бикарбона
150 гр бело брашно
150 гр интегрално брашно
1 јајце
сусам


Ставете го пашканатот да се вари со 100 мл вода околу 5 минути.
Оставете го да се олади заедно со течноста.
Ставете го брашното во подлабок сад, додајте ги преостанатите состојки + 100 мл вода како и оладениот пашканат со течноста.
Загрејте ја рерната на 220 степени.
Обложете со пек-хартија две поголеми правоаголни тепсии.
Со супена лажица ставајте од смесата по две лажици за едно лепче. Треба да се добијат околу 16 лепчиња.
Обликот на лепчињата не е толку важен ( види долу слика).
Посипете ги обилно со сусам и веднаш печете ги во загреана рерна околу 10 минути.





Ingredients:


200 gr parsnip, grated
250 ml yogurt
50 ml oil
1/2 tsp salt
1 tsp baking soda
150 gr white flour
150 gr wholemeal flour
1 egg
sesame seeds for topping 


Put the grated parsnip in a saucepan with 100 ml water.Bring to a boil and let it simmer for 5 minutes.
Let it cool down with its liquid.
Put the rest of the ingredients + 100 ml water to a mixing bowl, add the parsnip to the mixture.
Drop 2 tablespoons of dough onto the prepared baking tray, ( you will need two big one's )
You should get 16 round not so nice looking dough.
Sprinkle sesame seeds on the top and bake in pre-heated oven on 220 C for around 10 minutes.

note: I used spelt flour and integral sesame seeds.

Лепиња балони / Balloon breads

I had some leftover pizza dough, I felt adventures and I made those breads. We enjoyed them stuffed with deconstructed guacamole for lunch and I can't praise them enough! 










Потребни состојки:

230 гр брашно
пола лажиче сув инстант квасец
пола лажиче сол
1 лажица малсо
140 мл топла вода

Ставете ги сувите состојки во подлабок сад, додајте го маслото и водата и замесете средно-меко тесто.
Ставете го тестото во намрсен сад и покријте го со најлон-фолија.
Оставете го да се крева околу 30-40 минути.
Потоа премесете го и поделете го на 8 парчиња.
Секое парче развлечете го со сукалка во овална форма.
Припремете грил тава за печење на лепчињата, ќе ви треба и рерна со вграден грил.
Најпрво ставете две теста на топла грил тава на рингла и печете ги лепчињата додека не се појават мали меурчиња одоздола.
Не ги превртувајте туку ставете ги веднаш во рерна под загреан грил и гледајте како набрзина ке се надујат како балони.
Пазете да не изгорат.
Сервирајте ги топли или оладете и замрзнете. 







Ingredients:

230 gr flour
1/2 tsp instant yeast
1/2 tsp salt
1 tbsp oil
140 ml warm water

Put the dry ingredients into a bowl, add the oil and the water and make a dough.
Place in an oiled bowl, cover with clingfilm and leave in to rise for 30-40 min.
Then, knead the dough and make 8 balls.
Roll each ball into a flat bread.
Now prepare to cook the breads:
you will need a grill pan and an oven with grill.
To cook the breads, it's best to deal with them two at the time.
Put two into the grill pan and cook them on a stove until you see bubbles under the surface.
Don't turn them over, just put them under the grill and watch them swell up dramatically.
Make sure you don't burn them ( see the last picture ) .
Serve them warm or cool them fully before freezing.
